The Nish Knish

Ingredients

  • 6 tequila based spicy sausages (or hot Italian sausage)
  • 1/2 cup shredded sharp cheddar cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 pound store bought pizza dough
  • Egg wash
  • Tequila Cocktail Sauce (recipe below)

Directions

  1. Grill the sausages, let cool, then cut the sausages in half
  2. Roll the dough into a 12” square, divide in half
  3. Brush the edges with egg wash
  4. Place half the sausages in in square
  5. Spread 1 tbls of the Cocktail sauce on the sausage
  6. Divide the cheese between the knishes
  7. Sprinkle the cilantro on the cheese
  8. Close the knish by pulling the edges to the center
  9. Seal the dough and brush the top with egg wash
  10. Place a pizza stone on a hot grill
  11. Place the knishes on the grill seam side up
  12. Cook for about 4‐5 minutes
  13. Flip and cook for another 3 minutes
  14. Let cool for 5 minutes
  • Serve with cocktail sauce

Tequila Cocktail Sauce

Ingredients

  • 1 (12‐oz.) bottle chili sauce
  • 1 1/2 cups ketchup
  • 2 tablespoons chopped fresh cilantro
  • 3 tablespoons tequila
  • 1/2 cup prepared horseradish
  • 1 teaspoon lime zest
  • 2 tablespoon fresh lime juice
  • 1/2 jalapeño pepper, minced
  • Salt and pepper to taste

Directions

  1. Stir together chili sauce, ketchup, cilantro, tequila, horseradish, lime zest, lime juice, and minced jalapeño pepper.
  2. Add salt and pepper to taste.
  3. Serve immediately, or cover and chill up to 3 days. Stir well before serving.
