Ingredients
- 4 turkey legs
- 4 turkey wings
- Poultry Rub
- Yellow mustard (Weber’s)
- Wing Sauce (Anchor Bar)
- Wood for smoking
Turkey:
- Rub the legs & wings with the mustard, sprinkle with rub. Set on a sheet pan uncovered in the refrigerator overnight.
- Bring turkey to room temperature.
- Arrange ribs in smoker or a charcoal grill over indirect heart. Add the wood chucks.
- Maintain about 225‐240 degrees. Cook ribs for 3 ‐ 4 hours. With an hour left to go, baste the ribs with the wing sauce. Internal temperature should 165 degrees.
Poultry Rub:
- 1 ½ teaspoons salt
- ½ teaspoon paprika
- ¼ teaspoon cayenne
- ¼ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon ground black pepper
- ¼ teaspoon thyme
- ¼ teaspoon oregano
- ¼ teaspoon rubbed sage
- ⅛ teaspoon ground cumin
- Dash cumin
Combine all the ingredients in a mixing bowl.
