Tailgate Turkey

Ingredients

  • 4 turkey legs
  • 4 turkey wings
  • Poultry Rub
  • Yellow mustard (Weber’s)
  • Wing Sauce (Anchor Bar)
  • Wood for smoking

Turkey:

  1. Rub the legs & wings with the mustard, sprinkle with rub. Set on a sheet pan uncovered in the refrigerator overnight.
  2. Bring turkey to room temperature.
  3. Arrange ribs in smoker or a charcoal grill over indirect heart. Add the wood chucks.
  4. Maintain about 225‐240 degrees. Cook ribs for 3 ‐ 4 hours. With an hour left to go, baste  the ribs with the wing sauce. Internal temperature should 165 degrees.

Poultry Rub:

  • 1 ½ teaspoons salt
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne
  • ¼ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon thyme
  • ¼ teaspoon oregano
  • ¼ teaspoon rubbed sage
  • ⅛ teaspoon ground cumin
  • Dash cumin

Combine all the ingredients in a mixing bowl.
