Grilled Creamy Blueberry Cobbler

  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 6 cups fresh or frozen Blueberries
  • 1 teaspoon Lemon Juice
  • 8 ounce package cream cheese, softened
  • 2 tablespoons packed brown sugar
  • 10 3/4 ounce loaf frozen pound cake, thawed and coarsely crumbled
  • 2 tablespoons butter, melted

Directions

  1. In a large saucepan combine granulated sugar and cornstarch; stir in bluebrries. Cook and stir over medium heat until thickened and bubbly. Remove from heat and stir in lemon juice.
  2. In a small bowl beat together cream cheese, brown sugar, with an electric mixer on low to medium speed until smooth.
  3. Spoon about half of the fruit mixture into a 2-quart disposable foil pan. Dollop cream cheese mixture over fruit mixture in the foil pan. Spoon remaining fruit mixture over the cream cheese mixture. Cover pan tightly with foil.
  4. On In direct heat, prepare your grill for medium-High heat.  Place foil pan on rack in the center of grill. Cover; grill for 15 minutes. Uncover pan. Sprinkle top of fruit mixture with cake pieces and drizzle with butter. Keep pan uncovered.
  5. Cover grill; grill for 10 minutes more.
  6. Cool on wire rack for 30 minutes. Serve warm. Makes 6 servings.
