- ¼ lb. chopped, crisp cooked pancetta or bacon
- 1 cup provolone cheese ‐ shredded
Combine bacon and provolone cheese and set aside.
- ½ pounds ground chuck
- ¼ pounds ground veal
- ¼ pounds ground pork
- 6 Tbsp. dry breadcrumbs
- ¼ cup chopped onions
- ¼ cup chopped green pepper
- 1 garlic clove, minced
- 1 egg
- 1 tsp. dried oregano
- ½ tsp. salt
- ½ tsp. pepper
Combine all the ingredients and mix thoroughly. Then shape into 8 thin patties. Divide the pancetta/cheese on top of 4 patties. Top with remaining patties and press edges to seal.
Grill over medium direct heat until well done, about 4 minutes per side.
Serve on crusty rolls with marinara sauce.
