Big Ange Burger

  • ¼ lb. chopped, crisp cooked pancetta or bacon
  • 1 cup provolone cheese ‐ shredded

Combine bacon and provolone cheese and set aside.

  • ½ pounds ground chuck
  • ¼ pounds ground veal
  • ¼ pounds ground pork
  • 6 Tbsp. dry breadcrumbs
  • ¼ cup chopped onions
  • ¼ cup chopped green pepper
  • 1 garlic clove, minced
  • 1 egg
  • 1 tsp. dried oregano
  • ½ tsp. salt
  • ½ tsp. pepper

Combine all the ingredients and mix thoroughly. Then shape into 8 thin patties. Divide the pancetta/cheese on top of 4 patties. Top with remaining patties and press edges to seal.
Grill over medium direct heat until well done, about 4 minutes per side.

Serve on crusty rolls with marinara sauce.
